Tequila, apple cider ice cubes, pumpkin ale and pumpkin butter blend together for the perfect fall version of the classic margarita. Instead of lime juice, pumpkin ale is added to give it some zip – well, the tequila does that too.
I thought I reached the pinnacle of pumpkin cocktails with my Captain Pumpkin concoction, but I do love my tequila and had to figure out a way to make a tasty pumpkin margarita. The first one I made with the traditional lime juice and I just didn’t like the taste of it with the pumpkin. I used key lime juice, which is tart, maybe Rose’s lime juice would be better choice but, in general, I wanted to cut the sweetness instead of add more to the drink so, I used the pumpkin ale. The ale cut the sweetness of the pumpkin butter and amped up the pumpkin flavor. The earthy flavor of the tequila is perfect with the pumpkin and adding the apple cider in ice cube form makes sure the taste comes through without being watered down.
Tip: My adult children claim I’m heavy handed with the booze, so adjust to your taste; keep in mind that the pumpkin disguises the tequila a bit so they are, well, a little sneaky – no pumpkin chugging and driving!
An hour before serving: 1. Pour apple cider into an ice cube trays and freeze 2. Make pumpkin butter
For 2 Cocktails:
- 4 apple cider ice cubes
- 4 measured tablespoons pumpkin butter
- 1/4 cup pumpkin ale (I used Blue Moon)
- 1/4 cup tequila (gold)
Process all ingredients in a blender until well combined. Serve up in a classic margarita glass. Enjoy!
